WHAT'S GOOD NOW: NANTUCKET BAY SCALLOPS

 


 

Bay scalloping has been an important part of New England history for generations. Some of the world's finest bay scallops are found from Cape Cod Bay to Long Island Sound however none are more coveted than those that come from the islands south of the Cape: Nantucket and Martha's Vineyard.


These cool waters provide the perfect breeding ground for bay scallops, who use the area's native eelgrass as both a nursery and cover from predators. Somewhat smaller than sea scallops, the Bay Scallops from New England have a sweet, mild taste.


Fishermen like the fourth-generation family of Nantucketers at the Nantucket Bay Scallop Trading Company, can only fish them on weekdays when the air is above 28 degrees by 10 a.m. This attention to sustainability protects the undersized juveniles and preserves the population.
